I guess a wrestler "taking on" someone of a different weight class, just meant that the booker thought it would make an entertaining contest, either that or lazy matchmaking!

George Kidd often fought wrestlers of different weights and I saw Jackie Pallo take on Jim Hussey.
Bert Royal took on Kendo at Belle Vue as did Kung Fu.
McManus fought Marino, Quasimodo, Joynson.....and allcomers down to tiny Julien Morice.
Bert Royal used to jump across a good few of the weights, as Leonard said good wrestlers of different weights could work together no problem

I guess anyone could work with anyone regardless of the weight if they were prepared to work together and make each other look good.
