What were people's thoughts on them? I found them quite disrespectful to the pairs. I know Giant Haystacks did a lot of these matches and perhaps they had some validity. I saw a poster the other day for a match on April 27th 1982 for a 2 on one match involving Kwik kik Lee agaisnt Sid Cooper and Fit Finlay. I love Sid Cooper, but did he add anything to this match?

The worst thing about them if it was a genuine big man against two mid card or lower wrestlers was that the result was fairly formulaic and soon got fairly mundane.
I recall in the early seventies Brian Dixon muscling in on Wryton's flagship venue, The Civic Hall, Wolverhampton, by booking it in late August, a week before they officially started their season. I was seconding and Dixon threw everything at this show. Mitzi was on it and other bouts I recall included Jackie "Mr.TV" Pallo versus Les Kellett, Eric Taylor versus Pete Roberts and Pat Roach versus Bill Clarke.
For the purposes of this thread however, the interesting bout was The Borg Twins versus The Wildman of Borneo. If I recall correctly, one of the Borgs mistimed a dropkick and Borneo went over.
Some years later I saw Giant Haystacks fight off the challenge of Mark Rocco and Phil Pearson on a Max Crabtree promotion at The King's Hall, Belle Vue, but Alaskan tags were relatively rare in this country.
I assume from your comment that an Alaskan Tag was a 2 v 1. I hadn't heard of the term, showing my age! I remember 2 v 1 matches of The Monster wrestling two lighter men, their combined weight mustn't exceed 24 stones. They did give the fleeting possibility of a possible defeat and unmasking. Can't really see they were anything more than a gimmick. They would need careful matchmaking to create any real interest and I can't see it in the example you gave above.
